Ingredients:
Vegetables - Beans , carrot, colocasia,green peas
raw peanuts - 1/3 cup (optional)
coconut - grated 1 Tbl spoon
cumin seeds - 1/2 tspoon
green chillies - 4
mustard seeds - 1/4 tspoon
curry leaves - 4
salt - 1 spoon
yogurt - 1/4 cup
Preparation Method :
Step 1: cut the vegetables of your choice approx 1 inch in size and boil them until half cooked.(arvi/colocasia should be boiled separately , peel the skin off once boiled and the add with other vegetables)
Step 2: grind to paste coconut, green chillies and cumin seeds.
Step 3: Once all the vegetables are half cooked add the ground paste to it and add salt, 1-2 cups of water depending on thickness of the gravy you want , stir well so that the paste is evenly mixed with the vegetables and cook in low heat for 5-6 mins.
Step 4: in a small kadai heat 1 tspoon of coconut oil and add the mustard seeds and curry leaves once it splutters season it on the cooked gravy.
Step 5: Turn off the heat and let it cool down for 5 mins and then add the yogurt to the gravy and mix well.
Note :
1) Vegetables - Beans, carrots, potatoes,colocasia,brinjal/egg plant,white pumpkin,cluster beans,chayote etc can be used.
2) I also boil green peas and raw peanuts along with the choice of vegetables, tastes good.
Avial can be served with Adai( crepes made of lentils),rice & roti.
