Vegetable Pulao







Ingredients

Vegetables(Green beans 4-5,carrot - 1,potato - 1,green peas - 1/4th cup,onion- 1,tomato - 1 small, cauliflower florets 5-6)
Green chillies - 2
mint leaves - 4-5
Ginger & garlic paste - 1/4 tspoon
pulao masala - 1 tspoon
Basmati rice - 1 cup
cumin seeds- 1/4 tspoon
oil /ghee - 2 tbl spoon
salt

Preparation method

Step 1: cut the beans and carrot into 1 inch long pieces, potato into big cubes,

cauliflower into medium sized florets.onions , tomato and mint leaves finely chopped,
slit the green chilly .

Step 2: Heat 2 Tblspoons of oil/ ghee in a pan , add cumin seeds as it turns brown add onion fry for a minute , add green chillies, tomato, mint leaves and ginger garlic paste and cook for 2 mins, now add the vegetables and 1 tspoon of pulao masala, salt and mix well slowly so that the masala is equally absorbed by the vegetables, let it cook for 2-3 mins.Add 2 Tblspoons of plain yogurt , mix well and cook for another minute.

Step 3: Wash 1 cup of Basmati rice and add 1 1/2 cups of water and then add the cooked vegetables to it and cook it in a rice cooker.If pressure cooking just add one cup of water to the rice and cook for 1-2 whistles.

Pulao masala can be purchased in any Indian grocery store or use bay leaves - 2, cloves 2-3, fennel seeds 1/2 tspoon, cinnamon stick - 1 inch.

Pulao tastes best when served with onion raitha.

To make Raitha - take 1/2 a cup of finely chopped onion and add 4-5 Tblspoons of plain yogurt, salt and 1/4th tspoon sugar.
