Aloo Gobhi Mattar








Ingredients:

Cauliflower - 1 ( small)
Potato - 2 (medium)
Green peas - 1/3 cup
Onion - 1 small
Tomato - 1 small
Fresh Coriander - 1/4 cup ( finely chopped)
Green chilly - 2
Ginger garlic paste - 1/4th tspoon
Red chilly powder - 1/2 tspoon
Turmeric - 1/2 tspoon
Garam masala - 1 tspoon
Cumin seeds - 1/2 tspoon
asafoetida - a pinch
salt
oil - 2Tblspoon

Method of Preparation

Step 1 : Cut cauliflower into big florets and boil it for 4-5 mins add a pinch of salt in the water.(do not boil for a long time since the florets could get mashed while cooking) , like wise also boil potato at same time separately for 5-6 mins.

Step 2 : Finely chop the onion and tomato,slit the green chilly in the middle.

Step 3: Heat oil in a pan, add cumin seeds once it turns light brown add the chopped onions, tomato,green peas, green chilly , coriander,ginger garlic paste and cook for 2-3 mins,then add garam masala powder, turmeric, red chilly powder,asafoetida and salt and cook it for 4-5 mins till you see a thick gravy forming.

Step 4: Finally add the cauliflower florets and the potato(cut in large cubes) and gently mix them with the gravy, make sure you don't mash the potato and cauliflower and cook for 2 mins ....and done.

Goes well with Roti and Rice

Note : boiling cauliflower and potato is optional....you can cover the pan while cooking instead if you don't boil so that they get cooked well. I prefer boiling cauliflower just to make sure there are no worms :-).....you can also add dhania/corriander powder 1/2tspoon in the process while making the gravy, i don't just to make it a little simple.
