Andhra Pulihora ( Tamarind Rice)






Ingredients:

Mustard seeds
Curry Leaves
Urad Dal
Channa Dal
Asafotida(hing)
Peanuts
Tamarind - Lemon size
Turmeric
1/4tsp Fenugreek Seeds
2tsp Sesame Seeds
8 no Red Chillies
Cashew nuts
Oil(gingely for best taste)
Salt

Preparation Method:

Step 1: Take 2 cups of rice with 4 cups of water , add 1/2tspoon of turmeric and then cook the rice(turmeric gives a better colour).

Step 2: In a small pan heat 1 tspoon oil and add fenugreek seeds,4 red chillies,and the sesame seeds and roast it until it turns light brown , let it cool down and then grind it to powder.

Step 3: In a pan heat 1 Tbl spoon of gingely oil and add mustard seeds,urad dal, channa dal,peanuts, 4 red chillies, curry leaves and asafotida fry until it turns light brown, add turmeric , tamarind (thick pulp) and salt to taste let this to boil for 6-7 mins and then add the ground powder by mixing it well and boil for few more mins until it turns into a thick paste.
Spread the rice in a large bowl so that it cools down a bit and then add the paste and mix evenly.This would approximately serve 4 persons.
